For beef drying, mid-temperature and high-temperature drying can well keep the fragrance and color, usually, we can set the temperature between 60℃~75℃ to dehydrate the beef slices, the temperature setting more higher, and the color will become darker. The different thicknesses will have different drying times, the thinner, the drying time will be shorter.
For example (from our drying test):
1. Slice the beef, the thickness is 3mm
2. Setting temperature to 70℃, and the humidity is 5%
3. Put the beef slice on the trays.
4. After About 10 hours of drying, the whole process is finished.
The beef jerky will regain moisture when they are in direct contact with the air, so a sealed package is required. If you use vacuum packaging, you can better preserve the color and aroma of beef jerky.
